It's that time of year again when the clocks go back, the nights draw in and the temperature plummets as you are greeted by seeing your breath for the first time.
At this time of year people can turn to comfort food to keep them feeling happy and content throughout the winter months. There's nothing wrong with wanting to keep warm inside with comforting food, but it can often end up adding on the pounds and lowering immune systems at the same time, leaving you susceptible to those bugs.
Comfort food doesn't have to make you cuddly! Instead,why not try making some delicious, healthy, central heating all of your own by experimenting with these delicious ideas:
- Make home-made soup by sweating down onions and garlic, adding your choice of hearty root vegetables (parsnips, sweet potatoes, carrots) as well as some vegetable stock, simmer until vegetables are tend and then add a tin of pulses (chickpeas, borlotti beans, cannelloni beans, pinto beans) and whiz up with a blender. Season to taste.
- Experiment with a healthier style crumble - cook down a mixture of cooking apples and coxes with a sprinkling of brown sugar and generous pinch of cinnamon. Add mixed frozen berries (available in all good supermarkets). For the crumble topping some oats with some some chopped nuts (walnuts, almonds, brazils) in. Add a a drizzle of honey to mix and spoon over the fruit. Bake until crispy.
